Jerry Fielding's score to The Wild Bunch is one of my favorite western scores.

Other memorable scores:

Duel at Diablo

True Grit (the Jeff Bridges version)

Dances with Wolves (totally agree with Chris on that one)

Once Upon a Time in the West

The Man Who Shot Liberty Valance

Silverado

and I have a special fondness for the score of Cable Hogue.
Lynn in Lake Balboa

MAGNIFICENT SEVEN is an inescapable choice. But that theme almost plays as a concert piece. It would work anywhere, anytime. SHANE's score backs up the mood with a lovely intimacy. RED RIVER brings the thrill and the magnitude of the action right into your soul. If I have to pick a winner, I'll take THE SEARCHERS. Even more than the main theme, the incidental music paints such explicit pictures. I can hear it in my head, but can't begin to describe it. Maybe that's the point!

I have not seen a lot of westerns, but it's hard to imagine one with a better score than that of How the West was Won. :)
